We specialize in Louisiana Creole cuisine a unique style of cooking originating in New Orleans. It makes use of what is called the "Holy Trinity" (chopped celery, bell peppers and onions) . Gumbo is the traditional Creole dish from the French Quarter. It is a stew based on either sea food or chicken and sausage. Both contain the "Holy Trinity". Another famous Louisiana Creole dish is Jambalaya. Jambalaya is commonly made as a seafood or chicken jambalaya. Jambalaya's origins derive from the Spanish influence of "Paella" in New Orleans.
